Under Availability & booking rules, you choose how bookings are confirmed:

Direct booking: a customer picks an open time and it's confirmed immediately -- no action needed from you.

Request to book: a booking comes in as Pending. You review it and approve or decline. Declining a paid request automatically refunds the customer in full.

Most shops start with direct booking and switch to request-to-book if they want more control over their schedule.
